1 cup Very smooth creamy natural peanut butter, almond butter, cashew butter, or seed butter
⅔ cup Honey
1 teaspoon Vanilla extract
Heaping ½ teaspoon Sea salt
Heaping ½ teaspoon Cinnamon
2½ cups Whole old fashioned oats
½ cup Toppings of choice (e.g., chocolate chips, dried fruit, seeds)
3 tablespoons Flaxseed or finely crushed nuts
Instructions
1. Prepare Dry Ingredients: In a large bowl, combine the rolled oats and flaxseed.
2. Combine Wet Ingredients: In a small saucepan over medium-low heat, stir together the nut butter, honey, vanilla, salt, and cinnamon until fully combined and smooth.
3. Mix Together: Pour the wet mixture over the dry ingredients and stir with a spoon or baking spatula until everything is evenly coated.
4. Add Toppings: Fold in your desired toppings of choice for added flavor and texture.
5. Shape and Chill:
For Bites: Roll into 1-inch balls.
For Bars or Squares: Line a baking sheet with parchment paper, spread the mixture evenly to about ½-inch thick, and cut into desired shapes. Use bar molds if available.
For Crumble: Follow the same steps as the bars, chill, and then chop finely into crumble-sized pieces.
6. Store: Place the treats in an airtight container and refrigerate for at least 2 hours before serving.
